Classic Vanilla Butter Cake
Ingredients
Dry
2½ cups (315 g) all-purpose flour
2½ tsp baking powder
½ tsp salt
Wet
¾ cup (170 g) unsalted butter, softened
1¾ cups (350 g) sugar
4 large eggs, room temperature
1 tbsp vanilla extract
1 cup (240 ml) milk, room temperature
Instructions
Preheat oven to 350°F (175°C).
Grease and flour two 8-inch round cake pans.Prepare dry ingredients
Whisk flour, baking powder, and salt in a bowl. Set aside.Cream butter and sugar
Beat butter and sugar together until light and fluffy (about 3–4 minutes).Add eggs
Add eggs one at a time, mixing well after each. Stir in vanilla.Combine
Add dry ingredients in three parts, alternating with milk, starting and ending with dry ingredients. Mix just until combined.Bake
Divide batter evenly between pans.
Bake for 30–35 minutes, or until a toothpick comes out clean.Cool
Let cakes cool 10 minutes in the pans, then transfer to a wire rack.
Simple Vanilla Buttercream (Optional)
1 cup (230 g) butter, softened
4 cups powdered sugar
2–3 tbsp milk or cream
2 tsp vanilla extract
Beat until smooth and fluffy.
